Contributor Ryan Pinkalla shares his recipe using walleye for a lighter take on a quick stir fry dinner.
INGREDIENTS
STIR FRY
1 pound skinless walleye fillets
½ cup corn starch
2 bell peppers, chopped
1 red onion, chopped
2 cloves garlic, minced
1 cup pineapple chunks (reserve juice when draining can)
2 tablespoons vegetable oil
3 cups cooked white rice
SWEET & SOUR SAUCE
1 cup of the reserved canned pineapple juice
¾ cup brown sugar
1⁄3 cup apple cider vinegar
3 tablespoons ketchup
3 tablespoons soy sauce
1½ tablespoon corn starch
2 tablespoon water
DIRECTIONS
PREPARE THE FISH
1. Cut fish into bite size chunks. Lightly coat each piece of fish in corn starch. Heat oil in a skillet and brown fish in batches and set aside.
2. For the sauce, in a separate bowl mix pineapple juice, brown sugar, apple cider vinegar, ketchup, and soy sauce. Separately mix corn starch and water until smooth and add into sauce mixture.
3. Add bell peppers, red onion, and pineapple to a large pan and stir fry 5 minutes. Add minced garlic, cook 1 minute until aromatic. Pour sauce mixture into pan and bring to a boil and stir. As the sauce begins to thicken, reduce heat and add fish chunks into pan, mix to fully coat.
4. Serve immediately over white rice.
