Storage matters when it comes to keeping wild meat fresh

As hunters and fishermen, one of our biggest problems is food waste. We have all been out hunting or fishing and brought home our quarry, processed it and put it in the freezer. Almost certainly we have gone to that freezer and found a package of frozen meat that is 2 or 3 years old.
We are then left with the dilemma of whether it is still good to eat or not? That answer is not as simple as good or bad. Like many things it depends on several factors.

Study shows 72% of Illinois wetlands not protected by the federal Clean Water Act

Illinois once harbored more than 8 million acres of wetlands. By the 1980s, all but 1.2 million wetland acres had been lost, filled in for development or drained to make way for agriculture.
Now, roughly 72% of the remaining 981,000 acres of Illinois wetlands are no longer protected by the federal Clean Water Act, putting communities at risk of losing the flood control, groundwater recharge, water purification and natural habitat these wetlands provide, a team of Illinois researchers report.
