Most species are typically filleted, skinned, and de-boned, while others are just beheaded and gutted. And in the case of catfish, filleted and usually skinned, depending upon the intended method of cooking. Some of the state parks located on bodies of water where fish are often harvested have a fish cleaning facility to process fish.

Outdoor News recently ran a story from a Boone and Crockett Club research project that, at first cut, tells us as few as 4% to 5% of all fish and game poaching violations are discovered by wardens, reported by citizens, investigated and eventually adjudicated.
Now, this story just scratches the surface of that research work, and that project likely just scratches the surface of what’s actually happening in the field. There’s a lot of poaching going on out there. That makes me wonder if state natural resource agencies are putting enough emphasis on catching violators.

Moves by national organizations to address the use of technology in competitive fishing have yet to impact Illinois anglers, but DNR and the Illinois High School Association continue to monitor use of forward-facing sonar (FFS).
That’s a long way of saying, “There are no regulations – yet.”
Illinois has no statewide ban on FFS for recreational anglers, and the technology has been under review by DNR.

Few anglers spend as much time fishing the depths of Lake George as Burke Collins. Year-round, he is fishing through the ice or from his kayak, and he’s caught hundreds and hundreds of lake trout, many topping 30 inches.
What Collins has only seen a few of, though, are the landlocked Atlantic salmon that are stocked by the thousands in the lake each year.
“I’ve caught four or five the past two years,” he said.
